“Combining a chocolate festival with a day of fascinating classes taught by chocolate experts, the DallasChocolate.org Chocolate Conference 2010 promises to be a unique and tasty event. Each chocolatier will be sampling a range of their creations. Attendance will be capped and spread throughout the day to make sure that everyone gets the chance to meet each chocolatier and savor their works.”  DC

Participating Chocolatiers include J Dorian, Coco Andre, Wiseman House Chocolate, Collin College, Le Cordon Bleu, Nib Chocolates, Sublime Chocolate, and Paciugo.  Plus Clay Gordon of the Chocolate Life and Art Pollard of Amano Artisan Chocolate.

 
$15.00 adult ticket includes admission to one tasting session, all educational classes (space permitting), and up to 10 samples from the exhibitors.

A free-flowing discussion with all the exhibiting chocolatiers and special guests. Learn about the chocolatier’s inspirations and what makes their chocolates so special. Bring your questions!

   
11:00 AM How to Taste Fine Chocolate
  Madame Cocoa (Adrienne Newman)
 

A beginner’s guide to the world of fine chocolate.  Madame Cocoa (Adrienne Newman) is our guest chocolate educator and is active in the new world of fine American craft chocolate.  Adrienne has studied ancient Maya epigraphy and history to get to the origins of cacao in Mesoamerica, conducted chocolate tours of Paris, attended food shows and events from Cologne, Germany to San Francisco, and works directly with leaders in the global chocolate scene.

  Bring your questions, no matter how complex or silly. Clay Gordon will do his best to answer.  Clay Gordon is a chocolate expert and the author of Discover Chocolate (Gotham Books, 2007). He is the creator and moderator of TheChocolateLife.com, an on-line community for chocophiles and aspiring chocophiles. He has appeared on Oprah, The Diane Rehm Show, and numerous others. He is currently reporting for Dessert Professional.
