Fairmont Hotel General Manager Dan McGowan announces the appointment of Brandon Drew as Chef de Cuisine of the Pyramid Restaurant & Bar. Drew comes to the Fairmont from the Four Season's Cafe on the Green where he was Sous Chef.

Brandon brings over 13 years of food and beverage experience to his new role. He had been part of the culinary team at the Four Seasons since November 2009. Starting his tenure there as a Pantry Cook and subsequently promoted to positions with increasing levels of responsibility, Brandon served as Racquets Chef, Members Lounge Chef, Chef de Partie and Club Sous Chef. He was appointed Sous Chef at Cafe on the Green in June 2014.
Brandon previously completed an internship as a Garde Manger Cook for Terra Restaurant in St. Helena, California from September 2008 to January 2009. He holds an Associate Degree in The Culinary Arts from the New England Culinary Institute, where he was named Sommelier of the Future in 2009 and was twice awarded Silver Medals in ACF Cooking Competitions.
I am excited about helping to carry on the tradition of showcasing menu items utilizing Texas growers and regional purveyors as well as enjoying the 3,000 square foot herb and vegetable garden on the rooftop terrace at this 'Arts District Hotel,' says Brandon.
Expect to find everything from Cantaloupe Gazpacho and shareables of Rabbit Rillettes and Pork & Apples to main courses of Shrimp and Grits and Squash Pasta along with Bone in Ribeye and Prime Niman Ranch Beef Filet. For side lovers — Creme Corn Brulee, Charred Okra and Grilled Asparagus. Dessert temptations include Fig Tart and Milk Gelato Popsicle.
Rounding out the Pyramid team are restaurant GM Jonathan Bona and Pastry Chef Eric Burrell.
Pyramid Restaurant & Bar at The Fairmont Dallas encompasses more than seven thousand square feet, resonating with a modern, sleek, contemporary look evoking a stylish vigor and energy. With combined seating for 110 (57 in the dining room and 53 in the bar), the Pyramid also features a private dining room with additional seating up to forty-four and a Chef's Tasting Room seating ten to sixteen.
