Chef Matt McCallister Names Junior Borges Executive Chef at FT33

The former Uchi Dallas Chef de Cuisine will collaborate with McCallister on new menu items, including a refreshed Tasting Menu.

On Tuesday, January 26, Chef Matt McCallister and the FT33 team officially welcome Chef Junior Borges as Executive Chef. Borges moved to Dallas in November 2014 and worked alongside Chef Tyson Cole to open the Dallas outpost of the lauded Uchi. When McCallister heard the news of Borges' departure from the restaurant, he immediately sent a text.


"I met Junior when he started making regular trips to Dallas in advance of Uchi's opening," McCallister says. "I admired his ambitious food, thoughtful presentation, dynamic flavor combinations, and great technical execution. When I heard he was no longer on the Uchi team, I knew I wanted him as part of mine."


At FT33, Borges has been testing new dishes with McCallister and Chef de Cuisine Josh Sutcliff. FT33's ever changing seasonal menu will be a collaborative effort, and the three chefs plan to expand FT33's Tasting Menu, which is currently offered Tuesday-Thursday for $95/person, or $150/person with wine pairings.


"My background is cooking modern American food with global flavors," explains Borges. "The other day I experimented in the FT33 kitchen with a dish made of squid, lardo, pickled onion, and mustard. Will that dish be on the menu next week? I'm not sure, but it was as a productive conversation starter about how we see the menu evolving."


Prior to joining the team at Uchi and earning an outstanding five-star review in the Dallas Morning News, Borges received his official culinary training at New York City's International Culinary Center. While in the Big Apple, he worked at notable restaurants including Brooklyn favorite Marlow & Sons as well as Tom Colicchio's eponymous Colicchio & Sons. Just before moving to Texas he led the team at Amali, a beloved Mediterranean gem on New York City's Upper East Side.


"I'm confident that Junior will be a great addition to the team and bring a fresh perspective," says McCallister. "We've already been having a blast!"


Guests can enjoy Borges' influence on the FT33 menu starting next week.
